CARROT CAKE

 

INGREDIENTS

cake

225g castor sugar

½ cup cooking oil

225g raw grated carrot

2 eggs

250g self raising flour

 

butter icing

vanilla essence

140g softened butter

280g icing sugar

1 tbsp milk

 

 

METHOD

Pre heat oven to 190c

Mix sugar, carrot, egg and oil in a bowl

Fold in the flour

Put mixture into an 8in greased tin

 

Bake for 45 mins

 

Icing

Beat the butter until creamy and add half the icing sugar

Beat until smooth

Add 1 tbsp milk, vanilla essence and the rest of the sugar and beat again

 

Covers one 8 inch cake
